Wining: After harvesting the grapes, they are carefully destemmed, then crushed without a press and the grape must is led to the fermentation tank. In the middle of fermentation, 50% of the grape mass is bled, where it is transferred to a separate tank and fermented at high temperatures, and the remaining 50% is fermented separately at lower temperatures of 20-22°C in order to retain the maximum aromatic potential of the variety. After the end of fermentation, malolactic fermentation follows in stainless steel tanks and at the end of this, 12 months of maturation in 225 liter French oak barrels.
Taste characteristics: Soft with a full body and a pleasant aftertaste.
Food pairing: Accompany meat dishes with red sauces and pairs deliciously with yellow fatty cheeses. Serve at 16-18ºC.
