Wining: Assyrtiko is produced in the vineyards of Parnassos, giving a unique proposal for this variety. The high altitude and the particular terroir of the area give a fruity, high-intensity wine. After the grapes are harvested, the pre-fermentation extraction method is applied in an antioxidant environment in order to enhance the primary aromas and then the alcoholic fermentation of the juice at graduated temperatures that do not exceed 16°C. The wine remains for 2 months on its light lees with periodic stirring before bottling.
Tasting characteristics: Green color with an intense aroma of lemon and lime. Notes of white flowers, cool acidity with a moderate aftertaste.
Food pairing: White meats & poultry, seafood, fish. Ideally served at 8-10°C.
