Variety: Limniona
Vinification: This pure form of Limniona comes from vines over 30 years old, from mountain vineyards of Thessaly. Its fermentation took place in a clay amphora and in an oak barrel of 500 liters with the fine lees (at a rate of 60% and 40% respectively), where it was given its elegant charm. It matures for 10 months in concrete tanks, amphorae and old large barrels, thus gaining depth, complexity while maintaining its elegance. Another Oenops wine with indigenous yeast that is bottled unfiltered. A total of 1300 bottles of this premium wine range were released.
Taste Test: In the glass we see a moderate ruby color. The nose develops aromas of cherries and blackcurrants. There are also sounds of acacia flowers and nuts. Limniona is fresh and fruity in the mouth, with a spicy character. It has crisp acidity, fine body and velvety tannins.
Flavor Pairings: A great pairing for rib-eye, pasta with red sauces and baked pork.
