Production process: Harvesting of the grapes at the moment of optimal ripeness by hand in small crates and direct transport to the winery. Cooling of the grapes at 8°C, destemming and pre-fermentation extraction for 8 hours at 10°C. Static desalination and fermentation at a controlled temperature (17 °C), in small stainless tanks, in order to extract the potential of this great Greek variety. The de-fermented wine remains with its lees for three months with frequent agitation. Aging in the Cellar: 1-5 years
Vineyard location: Olympus and Skidi Marthi. Altitude: 200-300m
Tasting characteristics: Bright lemon color with green highlights. Complex aromatic palette where mineral aromatic elements coexist with the aromas of citrus fruits (lemon and lime) and spring white flowers. Rich tasting volume with lively acidity, interspersed with aromas of citrus fruits and herbs with intense mineral elements. Fine wine with a long persistent aftertaste.
Harmony of flavors: It accompanies enriched seafood, fatty fish, white meat, rich pasta with butter or cream, but also salads with an emphasis on starchy products, or traditional lemony dishes of Greek cuisine such as lamb fricassee, pork celeriac and stew-type soups.
